I’ve recently rediscovered my love of baking – baking is a type of cooking, of course! I’ve always found baking relaxing and an excellent stress reliever. I loved baking for my sons and their friends. They were always eager to consume everything I made!

I seem to have fads for cooking….sheet pan main meals at the moment.

Are sheet pain meals the equivalent of tray bakes?

Sort of….using a shallow pan to cook chicken or fish with vegetables in a wash of olive oil, lemon juice and oregano, or tomato and harissa.
